Turmeric

 

This warm spice contains many healing and inflammatory properties.  It was traditionally used in India and the surrounding sub-continent, and was called Indian saffron because of its rich yellow color which is used for textile dyeing.  Turmeric helps with cleaning the liver and intestinal tract.  It balances the cholesterol levels.  Because of this quality, turmeric has the bonus of detoxing and clearing the skin.  In the intestinal tract, it helps encourage beneficial flora.  This includes helping the mucus membrane of the intestinal tract, especially the lower part, helping heal hemorrhoids and anal fissures.

Studies have shown that it may be effective against colon, prostate and breast cancer.  Turmeric contains a good amount of folate and potassium.  

Turmeric is best absorbed with a fat, especially a saturated one.  Think: Butter, coconut oil, raw milk, raw cream...

 

Side note:  You can make your own curry powder: 4 parts turmeric, 1 part chili powder, 1 part cumin seed, 1 part coriander seed.

 

 

Curried Chicken and Coconut Soup

 

8 large chicken thighs, bone-in, skin removed

6 cups of chicken stock

27 ounces of coconut milk (homemade or from the can)

2 bunches green onions (sliced)

3-4 tablespoons curry powder

4 stalks of lemongrass (minced)

2 tablespoons peeled and minced fresh ginger

2 bags (6 ounces each) baby spinach leaves (frozen)

3 large limes

salt

1 bunch chopped fresh cilantro

 

Combine chicken, broth, coconut milk, green onions, curry powder, lemongrass, and ginger in a slow cooker.  Cover. low 10 hours

Remove chicken to large cutting board.

Remove bones. cut chicken into cubes.

Return chicken to soup. add spinach. Cover

Cook on high for 10 minutes.

Juice 2 limes.  Add juice to the slow cooker.

Season with salt.

Cut remaining lime into 6-8 wedges.

ladle soup into bowls.

Garnish with cilantro and lime wedge.

 

makes 6-8 servings
