Celery, another source of minerals and a good stirring stick!

Celery was regarded as an ideal dieter food as early as the 60's. Its crunchy nature being due to its high water and fiber content. It is also pretty high in potassium and some calcium & iron, helping kidneys and fluid retention.

Celery was used in Italian salads for centuries. White celery and green celery are the same, just raised differently. White celery is winter hardy and has the soil pushed up to the leaves when growing, thus blanching it. White is generally consider a gentler flavor than the green. Celery is also regarded as a winter veggie - November until Febuary - since it takes very well in the cold if treated appropriately. That's why we see it in American culture more so in fall and early winter meals. It is a great add to mashed potatoes.

Celery also contains compounds known as polyacetalines and phthalides which help reduce inflammation. Another interesting fact is celery is a natural source of nitrates. But because of nitrate-neutralizing compounds also found within its cells, those nitrates never really harm us.

Homemade virgin mary (with muscles)

  • 4 ounces fresh tomato juice

  • 1 oz of water

  • 1 ounce fresh carrot juice

  • 1/2 teaspoon of raw Apple cider vinegar

  • 2 tablespoons lemon or lime juice

  • ½ tablespoon cracked black pepper

  • 1-2 teaspoon turmeric, to taste

  • 1/8 teaspoon of horseradish (minced)

  • ½ tablespoon (organic obviously) worcestershire sauce

  • 3-4 drops olive oil

  • Sprinkle of Cayenne pepper and garlic (totally up to you!)

  • 1 egg yolk ( just the yolk)

  • Lime or lemon wedge, sea salt (or celery salt) and black pepper, for rimming the glass

Don't for get a nice long celery stirring stick. Drink while you crunch! Enjoy!
